"Vasnetsov Tomm". This is Tomme de Pirene. French hard cheese, originally from Aquitaine. It is one of the oldest cheeses in the world, one of the oldest European traditions. Such cheeses have been made by shepherds in mountain huts in the Alps ever since people started making cheese at all. Traditionally, Tom is made from skim milk. Farmers collect the cream and use the leftover milk to make cheese. The heads are covered with a thin, inedible black crust and are cylindrical in shape. The pulp is pale yellow, with a pronounced creamy, slightly salty taste and aroma of beef broth, onions, garlic, mushrooms. The cheese has sweet caramel notes in the taste and smoked aroma.
